Chicken for One

You can of course make this for more than one person, but it’s quick and easy when you just want something warm and sustaining and can’t really be bothered to cook

  • Little olive oil (or whatever you use, but I like the flavour of olive) in a pan, heat up.
  • Cut a small skinless chicken breast into chunks, add to oil and cook until it turns white
  • Snip up a couple of spring onions and add to chicken, or a bit of onion and maybe some garlic if you have it around
  • Add a handful of cherry tomatoes, halved
  • Add a splash of lemon juice or sherry vinegar
  • Season with salt and cracked pepper
  • Cook until chicken is cooked.

Tip into a bowl and eat.
