Carrot and Cucumber salad with lime and sesame dressing

This isn’t really ‘cooking’, but sometimes it’s difficult to think of a different salad to make.  Fresh and tasty and slightly ‘oriental’ – serve with my teriyaki mackerel or alongside a stir fry, or just as one of a range of salads for a barbecue or whatever. It looks pretty too!

Ingredients for around four people

One large carrot – made into ‘ribbons’ using a Y-shaped potato peeler

Half a cucumber – also made into ribbons, but avoiding the seeds in the centre

A good splash or four of lime juice

A good splash or three of toasted sesame oil

Method

Put carrot and cucumber in a bowl or arrange on plates – splash with lime and sesame oil
