Potato and Cauliflower Curry

Put frozen dhall in a pan over a very low heat to defrost (or defrost in microwave)

Handful of frozen cauliflower per person, put it in a bowl and tip a kettleful of boiling water over it and leave whilst you prepare the potatoes

Chop some new or waxy potatoes into mouthful size pieces – boil in water until tender

Snip cauliflower, which should now have defrosted sufficiently, into bite sized pieces

Add cauliflower and potato to dhall in a pan – even if dhall isn’t fully de-frosted, add any other things you fancy – e.g. frozen spinach and chopped fresh tomatoes and cook gently until the cauliflower is cooked or the spinach is defrosted and hot or basically until you’re ready to eat – it’s very forgiving and will keep warm on a gentle heat without being spoilt.
